I am interested in studying Arts and hopefully becoming a Journalist after university. Is this possible and if so what subjects should I choose to do so?

After graduating, you can do an MA in Journalism in NUIG, although the job prospects for journalism are tough, especially nowadays.

I would say it's more horribly oversuscribed than anything else. You'd probably have a start on someone with a Media Studies degree with straight Arts if you went to the UK.

I studied English and Soc and pol in Arts then the masters in journalism in NUIG, but in all honesty, the best way to go about getting into journalism is working hard and trying to get as much stuff published in your chosen field (news/sports etc.) start by sending articles to local papers. I didn't really find the masters that great a help and worked on honing my writing through the student paper and other small publications.
