Hi, Is there a law in Ireland that says if you want to be paid fortnightly, and not monthly, or is that just a myth, and it's up to the companies discretion ?

Never heard of such a law so until I'm corrected I'd go with myth. As far as I'm aware the agreed payment terms is what you negotiated in your contract; this could be daily, weekly etc.
