Semi-serious question: Has she asked you for help or are you looking for a way to hit on her?

Although it might seem annoying in the beginning, the best way I think is to start with general conversation and just keep correcting anything she says wrong (in a nice way of course). For oral English, practice, practice, practice is the key to getting it right. Likewise, she'll need to read a lot to improve her written English. For this, short stories and novels are probably the most enjoyable and thus effective means. Newspaper articles can be a good alternative, but they should be from 'proper' papers and it might be better to stick to a regular column than read from a broad range of journalistic styles as it will be easier to familiarise oneself with a recognisable writing style.

Maybe you could advise her to start reading boards.ie and then she might realise that her English isn't that bad after all :D
