Butternut Squash skins

    Looking to make a butternut squash soup. Anybody know if its okay/best to leave the skin on for cooking?

    A great tip from my mother is to cut it in half, oven cook it for 20-30 mins and then it's really easy to scoop out for soup. You can then have a lovely roasted taste to the soup if you put a bit of cinammon/nutmeg on the two halves in the oven. :) enjoy!!

    Don't forget to scoop out the seeds before roasting the squash. I use a potato peeler to get the skin off. Only takes a couple of mins.
