Question regarding diet

Hello I am looking for advice. I have been on a diet for the last 6.5 months (beginning of April), and 5 and a half months of those 6 and a half were spent consisting on 1,000 calories a day. It has achieved good results and I have lost 63 pounds since then.

However I need to lose another 28-35 pounds, but am finding that I am starting to struggle with this diet since I started college a month ago. In fact I haven’t lost any weight since last month as I have been resorting to packaged sandwiches and sweets to deal with the hunger. Also it is extremely difficult to concentrate in class while subsisting on 1,000 calories a day . This was difficult, yet more manageable during the summer months when I wasn’t doing anything.

However as of tomorrow, I have decided that as opposed to eating 1,000 calories a day that I am going to start eating 2,000 calories a day (still 200-500 kcals less than I need to eat at the weight I am now) and exercise for about 40 minutes a day to burn off 500 calories.

I am wondering if this is safe, and if it is ok to make such a sharp break in eating patterns – having been eating only half of that for the last 5 and a half months? I have a daily plan of food that consists of 2,000 calories and below 20 grams of saturates – consisting of country store muesli / milk / sandwiches / apples / meat / potatoes / vegetables / tea / desert etc. so I believe that what I will be eating will be reasonable, and within the limits I have set (2,000 calories and 20 grams).

However I am still a bit worried, as I have not eaten above 2,000 calories for over a half a year now, and am not sure if there are any health risks, or risks regarding weight management that I should take into consideration, and should I consult a doctor beforehand? Or should I be ok?

    Thank you for your help.
