Curry Rice Salad

    I have an aunt who makes a curried rice salad (with raisins and possibly other stuff I can't remember) and now that it's getting sunny in NZ I've got a weird craving for it. But unfortunately I've no idea how to make it.
    Does anyone have any idea what I'm talking about, and if you do would you be kind enough to share a recipe for it as well? Thanks!

    My aunt does a curried salad like this too, with some dried and fresh fruit and nuts in it?

    Il ask her what her recipes is!

    ok....


    • Brown rice
    • One large onion - chopped, caramelised
    • curry powder (she uses Tesco mild curry powder)
    • Olive oil
    • Sesame oil
    • Cumin
    • Coriander
    • 1 small red chilli
    • Honey
    • Salt
    • Celery
    • Blueberries
    • Raisins
    • One apple

    Its more or less a bung it all in together kind of a recipe depending on your taste.

    She recommends keeping rice al dente, and cook the onion first, and keep the celery chopped up nice and small. Also make a sort of warm oil dressing of the curry powder.

    Another curried salady thing I love is sooo simple and delicious

    raw carrot batons, raw small broccoli florets, mayo and curry powder mixed, and handful of pine nuts.

    yummy, and the raw veg makes it a bit easier to eat all that mayo

    I have often made this - or a variation of it, I would actually cook the rice in the curry powder - like you were cooking super noodles, then make it as per Getting theres Aunties recipe

    Thanks for all the help guys.
    I just fried some onion, added the rice, raisins and curry powder and then some water. But it was definitely missing stuff - more than likely the dressing (duh, eh? - I'm not the brightest!) so I'll try adding that to the leftovers.

    Anyone know a recipe for the rice salad you can buy at the deli counters in the supermarkets, the yellowish one with raisins, carrots, pine nuts, cucumber.... is the one below pretty much the same... ta for any info

    I don't have a specific recipe, just use whatever is to hand at the time, but I would fry the onion then fry the rice for a few minutes til it becomes translucent, then add stock, salt and curry powder, when the rice is cooked while it is still hot add a dressing of some kind of oil and something acidic- lemon juice or vinegar- and seasoning to taste- salt or herb salt or tamari. If you add the flavoring while the rice is hot it will absorb it as it cools and be way more tasty/less soggy. Another good trick is to soak any dried fruit (raisins and apricots are good) in orange juice before putting them in.

    Thanks a lot, really love the salad but not in love with the prices and have heard stories about people's hygiene at deli counters so am keen on making this myself so cheers for the advice :-)
