New Gas Boiler with output temperature reading

I'm trying to source a new gas boiler for an open vented / tank system that allows me to set the output temperature of the boiler thru a digital readout on the boiler.

My current boiler is a disaster as it is contstantly switching on/off cycling and the rads are too hot even on the lowest boiler setting. This constant cycling and overheating rads leads to very loud knocking noises from the pipes upstairs especially in the vicinity of the immersion tank in the hot press.

Any help would be appreciated as i have this issue for years and countless plumbers have scratched their heads and walked away.
