meringues and egg yolks.....

    Hey all,

    I made some meringues this evening (disaster, my beater gave in half way through now my arm is sore and they didnt even go that stiff:eek:)

    Anyway, I'm just wondering what people use the egg yolks for when they make meringues???? I'm hitting a brick wall trying to think of something.......

    Any tips greatly appreciated!

    I usually make some pastry with the yolks and freeze it, great for the coming mince pie season.

    Ice cream/ custard, lemon curd, mayonnaise or as phormium suggests pastry and freeze it.

    lemon curd, you can use it to mix with cream to put on meringue with raspberries - yum.
