    Sorry if this is old news/discussed before.

    I was watching a video from James Hoffman discussing the removal of the crema from an espresso. He was stating that it enhanced the taste of the espresso.

    Was this video a piss take? has anyone tried it? does it really make the espresso more balanced/taste better?

    To be more specific, I have no idea but according to the book I'm reading it sounds like a contradiction to traditional philosophies.

    Crema can taste poor to varying degrees, depending on the coffee, when tasted in isolation.
