Just for clarification, do you need a third language for science in Maynooth?

No. In fact you don't need a third language for any science course that I know of.

I thought the NUI's all require a third language?

They do, but Maynooth seem to ignore that policy when it comes to Sciences.

It's not that Maynooth is ignoring NUI policy at all. It's the same for all the NUI Colleges. It's stated clearly in the NUI matriculation regulations:

"For entry to the Colleges/Faculties of Engineering and Science any
other subject accepted for Matriculation Registration purposes may be
    substituted for the Third Language."

    The document is here:
    http://www.nui.ie/college/docs/matricRegsENG_2010_2011.pdf

It's the first bulleted "Note" on page 14.
