    What's the craic with bottle fermentation? What's so special about it and is it something homebrewers can do without too much difficulty?

    You can do it quite easily and if you cant a carbonated beer its a must, simply you want around 4-5 grams of table sugar per litres of beer

    So lets say you have 20l litres heat 80-100gs of table sugar in some water till its just boils, this will kill of any bugs present. Let cool, add to you bottling bucket with you beer, very gently mix in and then bottle as normal

    Dungarvan Brewing Company's Black Rock Stout and Little Valley's Stoodley Stout are both bottle conditioned and available here.

    Also Sierra Nevada Stout and porter are.

    But 30kmph many commercial brewery's force carbonate there stout before bottling in a tank. it can be done on the home brew scale but need some specialised equipment
