Cheese sauce

Ok I'm making cheese sauce for nacho's later using this recipe http://www.foodnetwork.com/recipes/rachael-ray/super-nachos-recipe/index.html but i need a different cheese cause I've never seen this one before. Help please!

Pepper Jack Cheese is fairly popular nowadays. Should be able to find it in Dunnes or Superquinn.

It's an american thing, nachos, burgers, fries blah blah balh, almost everying comes with a super- version complete with a melted cheese sauce.

Pepper Jack is Montery Jack cheese with peppers in it. Montery would do if you see that (your adding peppers anyway).

If you still can't find it, get a semi-hard cheese, cheddar is to hard imo so go with Edam or Emmental
