I know i've seen this answered somewhere on this forum before but i can't find it at the moment: When you're coming up to a red light do you have to downshift through the gears, or can you coast until stationary, then change to first?

You don't have to change down the gears. You can stop in the gear you are driving in. Sometimes changing down the gears helps if you can anticipate that the lights will change to green in your favour.

I'm presuming you saying "coast" was just a turn of phrase. When talking about driving "coasting" is driving with your clutch down or partially down. It is not allowed and will be marked in your test. Effectively your car is in neutral when you do this and therefore not properly under control
