I would say a great bouquet of flowers delivered to her on the eve of your wedding (if you're spending it apart) with a very personal note telling her how much you love her and how much you're looking forward to being married to her.

I second the note thing, do you have a favourite perfume that you like on her? Maybe pass the note and perfume to a bridesmaid to give her when she waked.

Totally agree with sending her a personal note for the night before or morning of the wedding. You can not put a value on that. She'll have enough flowers around so not sure about sending them, maybe one of her favourites.
I would be thinking about getting something that she can have all for the future.
a sister of mine got me an engraved coin like piece of silver, as a mark of friendship and love and I keep it in my purse.
Something like that might be nice.
A delicate antique style picture frame with a photograph of you both at a particularly special time in your relationship maybe - which can be substituted with a photo of you on your wedding day or honeymoon after.

Cheers for the ideas, some good things to think about there, like the idea about the note.

What about getting a star named after her? It'll last forever :)

This might be a nice idea, but be aware that these things are unofficial. Stars aren't actually named after people. It's still going to have it's official name (e.g. HD209458) regardless of what some certificate says. :)

Is there anything that she's always dreamed about doing but has never gotten around to?
Could be as simple as "I'd love to learn pottery"!, or learn a musical instrument/new language/skydive or something?
Then organise a lesson or sign her up for a course......
It's thoughtful and a gift that's personal to her to indulge herself in.

I love Ginny's idea, It will take some time to get it all together and completed for the day so you'd want a bit of time.
