Nothing strange about setting it up. Select other, then put in your details such as incomming mail server and username and password. Some places you use whole email address as username. Outgoing mail server would be from your phone provider.
Any specific problems? Reply back with error and ill help.

    Try this

    1.
From the Home screen, tap Settings.

    2.
On the Settings screen, tap Mail, Contacts, Calendars.

    3.
    Tap Add Account....

    4.
    Tap Other.

    5.
    Tap Add Mail Account.

    6.
Complete the following fields, and then tap, Save.
    Name
The name to display on your email.
    Address
    Your email address.
    Password
    Your email account password.
    Description
A description of the email address to display in the email account list on your iPhone.

    7.
    Tap POP.
    8. Enter your Incoming Mail Server information:
    Host Name
    mail.email.com? Get from your outlook
    User Name
    Your full email address.
    Password
    Your email account password.
    9. Enter your Outgoing Mail Server information:
    Host Name
The outgoing server set by your provider
    O2’s is smtp.o2.ie
    Vodafone’s is mail.vodafone.ie
    10. It will then try and configure your account using SSL, it will fail and after 30 seconds to 2
minutes ask if you would like to configure without SSL. Choose Yes.
    11.
    Tap Save.

It would have to be something like pop.email.com.

Can you not simply sync with iTunes, having ticked sync all mail accounts?

    Sending email
iPhone works with almost all web-based and desktop email clients. If, after setting up your email on your iPhone, you can receive but not send email, try using the Vodafone mail server:
    Vodafone Mail SMTP
    Host name mail.vodafone.ie
    User Name
    Password
    Use SSL Off
    Authentication none
    Server port 25

When I delete emails on iPhone they're still on pc, and vice versa. Is there any way to ensure that one deletion will work across both devices?

Tap Settings on the iPhone Home screen.
    Now tap Mail, Contacts, Calendars.
Tap the desired account under Accounts.
    Select Advanced.
Now tap Delete from server under Incoming Settings.
    Select:
Seven days to have iPhone Mail remove mail from the server a week after it has been downloaded.
When removed from Inbox to make iPhone Mail delete mail from the server only when you delete it from your iPhone Mail inbox.
Never to keep copies of all messages on your POP server.
    Press the Home button.

Yes, see if your mail provider supports IMAP and set up the account on all devices to use that.
