i had some pigeon breast this eve ..

i slowly boiled the breasts for a hour .

    ingredients .

lidl do a lovely mediterranean pitta wrap ,lettuce ,white cabbage ,tomatoes ,red onion , peppers , chillies ,mayo ,chili sauce ,garlic .

i then slice the pigeon breast ,also onion, peppers and dice the chili .a quick stir fry .

slice the cabbage ,lettuce ,onion tomato .

make as a Kebab chili sauce ,garlic mayo to taste .

very tasty ,all for a few cent . even nicer with a cold one

favorite pigeon recipe is the simplest pan fry the breast for 2 min on each side then put into a low oven for 10 mins this helps to relax the meat while cooking i make a simple salade and a pea puree serve and drizzle with a good olive oil add a glass of blossom hill rose to wash down
    love it and very healthy.

good stuff , use a bit of white cabbage to gives a cut to it .

if you cut the breast cross grain its less chewy and it relaxes the meat .

    glad u liked it .
