Orange Sauce for Roast Duck

    Just wondering if anyone has a recipe for an orange sauce for a roast duck and also cooking instructions for a whole duck??!!
    Would prefer to make sauce from scratch rather than buy a packet sauce.

    I can't remember the exact recipe from the top of my head, but some variation along the lines of;

    Juice of 2 oranges, finely ground rind of one,
    Drop of water,
    Sugar (Brown possibly?)
    Cornflour

    You could probably dice up onion/spring onion/ginger/garlic to taste too.

    Leave it reduce down until it's quite thick.

    When roasting a whole duck, place it on a rack in a baking tray so that the fat can drain off it. Ducks have a lot of fat, and if you don't have it on a rack it will be all soggy and horrible!

    Ensure the end of the duck is open to allow the meat to cook on the inside as well as the outside. Don't stuff it.

    You can put some salt on the dry skin on top of you want it to go crispy.

    And cook it in a hot oven, 190-200.
