    Just sussing out the world of Chai. I have had blended with Black Tea (I think this is how they have it in india with lots of Milk) and I have had it with herbal blends also. I have liked what I have tasted so far and wanted to know What is the the best Chai out there?

    sugar

    Put all the ingredients except the tea leaves and the sugar into a saucepan, bring slowly to the boil and simmer for a couple of minutes. Bring back to the boil, add the tea leaves, cover and reduce the heat to a simmer for 1-2 mins. Turn off the heat and allow the leaves to settle. Serve in tea cups.

    I'd use Assam, or a breakfast blend you have to hand. I wouldn't make it with anything expensive, it's not like you'll taste the subleties of a fancy tea through all those spices.

    Actually, head to a Asian market for all those spices. They are so much cheaper than what you get in health shop and supermarket. I have got my hands on a very nice chai blended in a Rooibos and also one blended with Black tea - very soothing. Anyway, working up to making my own to compare

    Don't think there is an Asian shop near me but there is an African shop will try there

    Yeah, I like to brew up a chai as a treat every now and again. I use

    cardamon pods, cracked
    cinnamon stick (never ever the powder!)
    couple of crushed pepper corns
    some fresh ginger peeled and sliced
    cloves
    some birds eye chilli seeds (for an extra kick)

    I used probably 2/3's milk and 1/3 water. It took me ages to get the taste 'right' but after a few brews you'll get it there. Oh yes, and don't forget the tea bags, honey and biscuits :)
