Carbon dioxide guns load from a little canister like the ones from a Soda Stream, but disposable and costing a quid each. They usually require a slightly extended magazine to fit the canister, meaning on some guns the magazine is less realistic (sticking out the bottom of a Beretta 92 or a fat grip on a Colt 1911 for example). Carbon dioxide doesn't change much in output pressure due to ambient temperature, so it'll shoot much the same in winter as in summer, and there's no major cool-down effect. There's a lot of snappy blow-back from carbon dioxide and any such guns I've tried out have been very satisfying to shoot.

The other type run from a big (well, fizzy-drink bottle sized) bottle of compressed gas which is used to fill the magazines through an inlet valve. A bottle costs between ten and fifteen quid and fills far more than ten or fifteen magazines. There are different types of gas so you can buy one that provides the appropriate power for the current weather, which is handy when going abroad, but the same gas will be weaker in cold weather than in warm. Release of gas causes the magazine to get cold, which weakens the output in the same way weather does, if firing like a mad bastard (but if you're not emptying magazines in seconds it tends not to be an issue). They're cheaper and easier to run, but how good the results you get are seem to depend on selecting a well-designed model.

I have one of each and don't find there's much to choose between them, really.

Edit: I'm referring to pistols there, but it's possible you're thinking about a rifle, in which case, just go with an electric one; at the current tech level gas blow-back rifles aren't really much use as anything other than collector's pieces and a hobby.
