I'm lecturing in an IT at the minute, under contract, but another lecturing job has come up in a different IT that I think I have a chance at getting. My question is, if I apply for this other job will it get back to my current employers and possible ruin my chances of getting another contract with them?

It is a small country and there is always a chance, particularly as the interview panel consists usually of a manager from another IT.

I think your current employer should understand progression and your need to get something more permenant than you have.

Also if you had a number of contracts with the institute you might be entitled to a CID, Contract of Indefinite Duration. Your union might be able to advise. This is effectively a permenant contract in all but name.
