    All depends on your budget.
I was there a few weeks ago. We stayed in Als 'Resort', not to be confused with Als 'Hotel'.... Really nice hotel with entrance to Chaweng beach from the hotel grounds. Its not very cheap though. We were paying 2300 for the deluxe double. (Its priced at around 2800 on the price list, but we bargained as we were staying a few nights)

Bo Phut Resort and Spa 12/10. Warning - It's not cheap but well worth it

Weekender Resort & Spa http://www.weekender-samui.com/ is cheap, nice pool and on the beach... probably just above a 2 star. A beach house is better than the hotel itself. Lamai is not as mad as Chaweng.

We stayed here on our honeymoon. It's quiet and on the beach. Has a pool too, so it ticks a lot of your boxes :)
Was fabulous, amazing staff and the pace of life was so relaxed. Gets great reviews on Tripadvisor. We barely left the place - things to do around the resort and some great food to be had.
I'd defo go back again if it wasn't so bloody far away!
