    Here's a few:

    Garlic Bruschetta Recipe
Rub the toasted baguette with a cut garlic clove. Dribble with extra virgin olive oil.

Sweet onion and Cream Cheese Bruschetta Recipe
Sauté onion slices until they are soft and caramelised. Spread cream cheese on toasted baguette (rub a raw garlic cloved across it first) and spread the soft onions on top. Serve warm.

    Tomato and Anchovy Bruschetta Recipe
Rub a garlic clove across toasted baguette slices, then run the cut side of a tomato across it. Dribble some fruity extra virgiin olive oil on top and add a little chopped anchovy. If you are not using the anchovy, add some salt instead as you will need a little saltiness.

Goat's Cheese and Pesto Bruschetta Recipe
Put a thin slice of goat's chease on toasted baguette slices, and spread with basil pesto. Grill until the cheese melts and bubbles.

Tomato Bruschetta Recipe with optional Mozzarella
Rub a garlic clove across toasted baguette, add chopped fresh tomatoes, a little chopped fresh basil, then if you wish, arrange pieces of mozzarella on top, and grill until the cheese goes soft.
