T&H Doolans have trad every night: http://www.tandhdoolans.com/music.htm

Coincidentally there is a new trad music trail being launched soon:
The re-opening of the Waterford Crystal Visitor Centre in the City Centre and developments taking place in the Viking Triangle have created opportunities which can be developed to encourage visitors to stay longer in the City. One such initiative is a new traditional Irish Music Pub Trail which is being launched on July 8th. Running from 7pm to 9pm it will give people, including families with young children, the opportunity to learn about traditional Irish music and the instruments on which it's played. This will add to the existing traditional Irish entertainment already offered by Dooley's Hotel and the Granville Hotel. The opening of the medieval under crofts as part of the new Viking Triangle walking tour will hopefully prove a popular draw for locals as well as visitors.

I know it´s not in the city but "the local" in the Square, Fungarvan, is a great spot for trad music. you could bring the visitors up for the spin,
