Dutch saté sause

    Hi people,


    Anyone know how to make ( Dutch Saté Sause ) the same sause you find in takeaways/afhaalrestaurant throughout Holland.

    I understand its a Indonesian - Dutch sause, although i'm looking for recipes that you would find in a takeaway, restaurant outlet in the netherlands.

    this sause is usually served with fries and chicken, otherwise knowen in Dutch as ''Kip Saté' which is Chicken Saté or friet saté.

    Some parts of holand they have a dish with dutch mayonnaise, ketchup, Sate Sause and an optional sprinkle of onions. otherwise knowen in dutch as : FRITES OORLOG MET FRITESSAUS , SATÉSAUS EN UI

    Hi magneticimpulse, thank you for your reply. I have searched so many stores, and supermarkets for this sause without any luck. I have tried some although not the same.

    There was a butchers in Santry (Omni shopping centre) that had someting very close, although they stoped selling it :(

    I'll try some more from the supermarkets, although if anyone knows how to make it, feel free to drop us a line

    I presume you mean the peanut based sauce? That's what I think of when I hear "satay sauce".

    This is really good:

    2 Cloves of Garlic, minced
    1/2 Red Chili, deseeded, finely chopped
    1/2 Small Onion, finely chopped
    Tablespoon oil (sunflower, peanut, rapeseed, etc. not olive, too strong flavoured)
    2 Tsp Ground Cumin
    1 Tin of Coconut Milk
    2-3 Heaped Tablespoons of Crunchy Peanut Butter.
    Juice of a lime
    Salt to taste (1 good pinch for me)


    In a saucepan, heat oil on a medium heat and soften garlic, onion and chili for a few minutes until onion translucent. Add cumin and cook, stirring frequently, for another two minutes.

    Empty coconut milk into saucepan and allow to start to warm up for about 5mins. Put peanut butter into saucepan, using the back of a wooden spoon to squash and mix it with the coconut milk until it dissolves. Allow mixture to come barely to the boil and then turn down to a low heat. Stirring frequently, allow it to thicken up to a nice consistency - this might take about 10mins.

    Don't allow sauce to boil vigorously or the oil will "split" from the sauce and, although it will taste fine, it won't look too nice.

    Just before serving, add the lime juice and salt.
