Okay to eat courgettes that slugs have gotten to?

Slugs had gotten to my courgettes, but I now see to have them under control.

But for those courgettes that they have taken a bit out of, if I just cut that section off, is it okay to eat the rest?

Yes, just cut off the sluggy bits. Though if they did serious chewing especially near the stalk you might find the courgette is going soft, so you should dump it.
