    What's the procedure with them?

Ok, so the employer gives you a contract for a year which they may or may not renew ...but what about the employee?
Can you leave at all? Are there standard/common notice periods? Are all contracts different or are there minimal reqiurements set down in employment law somewhere?

In the current situation it would be a bit of a bummer to get stuck in a contract job which you can't leave while a better, permanent postion passes you by never to return again.

you just need to give notice when leaving, normally 1 month unless otherwise stated in your contract.
read the contract carefully........all the info is here........ http://www.citizensinformation.ie/categories/employment/employment-rights-and-conditions/contracts-of-employment/fixed-term-or-specified-purpose-contracts

What's the difference between an open-ended contract and a permanent job- I'm guessing you're always "temporary" when you're on a contract and so can be let go at any time, is that it?
