Material and labour involved in injecting damp proofing to an old stone house are not expensive, especially if the outside ground level in below floor level.
There are numerous companies that do this work so get quotes.
Also if you are DIY minded there are companies that will sell the dpc liquids in diy tubes

Wouldn't go with injecting DPC in stone - the problem being that the DPC would have to form a complete seal to be effective and this can't be achieved due to the randomness of stone sizes, coursing etc.

Better to go with an Electro Osmosis DPC which uses a series of copper rods inserted into the wall, all joined with a wire connected to a low voltage power source which forms an electrical field in the wall to repel water. A few places do it around the country. Costs depend on size of property really.

Its down to choice, electro osmosis is fine and works well.
Injecting liquid dpc will also works well but as you say it is more difficult to get it right because of the randomness of the stone, however with reasonable care and attention to detail the solution is permanent.

One issue with electro osmosis is what happens after the system is fitted, far to ofter home owners, kids or another will remove the power transformer from the wall or the power supply will fail or become disconnected. When this happens the the damp proof protection fails.
