I applied for the licence but really really wanna go driving. I'm insured and all that. Is it ok to go driving without a phyiscal full licence, even though I've applied with it. Will the receipt from the application be covered? I forgot to copy the certificate of competancy..

Pending your licence being issued and in your hands, you are still driving on your learners permit. So yep, you can go driving, but only (legally) under the same conditions as before you passed your test.

Congrats on passing the test - you'll have the pink slip in a matter of days.

My mam (2 years+) is with me for a while until I get used to her car (was using instructors before), so that shouldn't be a problem.. Any idea how long it usually takes for the licences to be processed?

When I passed my test, the tester said it was ok to take the L plates down straight away, but warned me not to go on the motorway until I physically had my licence, Licence shoud be with you whitin a week.

I was told by the motor tax office that you can drive with the receipt they give you.

Probably won't happen, but if I do get stopped, it's sitting there in the glove compartment ;)

Driving on a cert of competency/receipt for application for Driving licence...well...your results may vary according to why you are stopped (if you are stopped) and how your dealings with the garda in question progress.

Legally, you are still driving on the Learner Permit and subject to those restrictions and requirements, until you have your license in your hands.

I wouldn't drive on a cert of competency, but I'd have no reservations driving on the receipt from the tax office. It only takes a week to get your licence so if the garda who stops you asks to present it within 10 days you will have no problem doing so.
