    Blue roses or any exotic colour roses like black roses are generally coloured using food colouring.

    The best thing to do is to experiment a bit to get the match you want. Simply put some roses in a vase with water and food colouring. The flowers absorb the colour and change colour. I would recommend using white roses but if you want a dark blue, pink or red might work better.
