I have a 07 vivaro van,the thermometer is not working right, some time the temperature reads in in 40s or higher, now there is no reading at all. Is the sensor gone or where is the sensor on it? how much for a new one? Is it a big job to replace?

There'll be a coolant temperature sensor, most likely somewhere near or on the thermostat housing.

First thing to do is check the wiring is clean and secure going to it, could be just loose if it's working intermittantly.
