the last aircoach leaves dublin at 7 so only option is a taxi or maybe a plane?

Short answer, no. Last train is at 9, last bus is at 7, and last plane is around 6ish I think. You could get a taxi, but it would be cheaper to stay in Dublin overnight. First train to Cork from Hueston is at 7am, first flight is at 8:50. Driving is the only other option.

I'm pretty sure you can hire a car for pretty much the same price as the train. Those airport hire places that have branches in cork and dublin can do regional pick ups, so its ok if you're only going one-way.
