Quick Salmon Meals?

    Hey Guys & Gals,
    My other half, is a massive fish/ seafood fan. Me, not so much. Although I am adapting, case of having to :)

    Can anybody offer some meal suggestions for a couple of salmon fillets?
    Would greatly appreciate any help.

    Here you go...

    Salmon Steaks in a Bag
    Makes 4 portions
    This can be easily adapted for other fish, chicken breasts & pork chops (but cooking time may need to be longer for the chicken & pork depending on the size of the cuts).

    Ingredients
    4 large fresh salmon steaks
    4 bay leaves
    4 sprigs of dill
    4 knobs of butter
    2 cloves of garlic, finely sliced
    2 lemons, 1 juiced - 1 quartered
    Olive oil
    Salt & black pepper, to taste

    Preparation
    Preheat the over to 180ºC, Gas Mark 4
    Tear off 4 squares of tin foil - each being twice the size required to wrap a salmon steak
    In each square grease the center with some olive oil
    Place a salmon steak on each square along with a bayleaf, sprig of dill & knob of butter
    Divide the slices of garlic & lemon juice equally between each salmon steak & add salt & pepper to taste
    Taking one of the tin foil squares bring two opposing sides up to meet each other & fold so that you make an open-ended bag (Be careful not to spill any of the contents)
    Now fold the open ends so that the salmon is sealed inside the tin foil "bag".
    It should be secure enough that little or no steam will escape
    Place each of the "bags" on a roasting tin & pop in the over for 25 to 30 mins (Take care when opening as the steam may scald)
    Serve with buttered new potatoes & a side salad of crunchy leaves

    What about pan frying the salmon and serving it with a creamy mushroom sauce and baby new potatoes? Salmon is beautiful pan fried and when the outside is nice and seared. Yum!

    Or you could pan fry and serve with a beurre blanc sauce. Basically in one frying pan fry the salmon until nicely done (crisp on the outside) and nice and soft on the inside. Then in another pan just put in a splash of white wine and mix in some butter and parsely and spoon over the salmon. Serve with a salad and new potatoes.

    Mmm!

    You could have it with pasta
    Cook the salmon in the oven or pan fry,
    Cook pasta and stir through cream and green pesto and sprinkle with pine nuts.
    Serve with a leafy green salad :pac:

    Put the fillets into a bag with sweet chilli sauce. Leave for couple hours.

    Take fillets out of bag

    Put into oven for 15-20 mins

    Serve with wedges and salad.... this dish has always been a winner for me.

    2.

    Cook pasta

    Saute onion and leeks

    Add some white wine

    Flake the salmon and add that.

    When salmon almost cooked, add couple dollops creme fraiche, some mustard, salt and pepper to taste.

    The good thing about this is that if you are not keen on salmon (like my bf is) it is not that fishy tasting.

    Poach in water and white wine with bay leaves, cardamom pods and star anise - gives a nice fragrant oriental flavour. I serve this with rice and soy sauce, with sugar snap peas.

    OR

    Baste with teryaki marinade and grill, while topping up the sauce so you get a nice blackened caramelised surface. Nice with noodles stir-fried with some red peppers.

    Salmon is so darned versatile :)

    Fantastic use of leftover salmon

    Flake the salmon and mix it into some hot pasta with a knob of butter, a bit of lemon juice and some herbs.

    Oh gods, I was trying to think about this before I posted :o I do it by eye, and once the salmon is more or less covered in the pan it will poach evenly. I suppose I'd throw in about half a glass to a full glass of wine for 2 salmon fillets?

    Buon Giorno! I am new here!
    For a nice Salmon dinner, start with wild caught bright red thick salmon fillets. Salt and Pepper...use ground sea salt and ground fresh pepper..makes big difference. Pan sear until just done it will continue to cook. Make red potatoes, taking all the small ones first,enough for two people!...cut in half...put olive oil, salt pepper, fresh coarse chopped rosemary and 2 garlic cloves. Put in bowl and mix until well coated. Bake in glass pan at 400 for 45 minutes or until golden brown( take mine out at half time to toss more). Then get fresh asparagus, cut about inch and a half to get the stringy part off bottom....sautee in olive oil....sprinkle with the sea salt...take it off the heat when tender....put balsamic vinegar to your taste!
