2010 Cooking Club Week 13: Thai Beanburgers & Sweet Potato Wedges

    Thai Beanburgers & Sweet Potato Wedges

    Ingredients

    2 x 400g Tins Butterbeans
    6-8 Spring Onions
    1 Clove Garlic
    2.5cm Piece of Ginger
    1 Red Chili
    1 Lime
    Soy Sauce
    Pepper
    Olive Oil
    Sweet Potatoes - enough to make wedges to feed everyone
    Rosemary
    Flour
    Optional Ingredients
    A handful of Fresh chopped coriander leaves
    1 Lemongrass stalk, topped and tailed and smashed and chopped

    Method

    Firstly pre-heat the oven to 180C/Gas Mark 4

    Peel the Sweet Potato

    Then chop into Wedges

    Place wedges on a baking tray, cover with olive oil, sprinkle with Rosemary and black pepper.

    Place into the oven for 20-25mins.

    While the wedges are cooking, make the beanburgers.

    Chop up the ginger, garlic and chili, and stick into a blender with a tablespoon of Soy Sauce and the juice of a lime. This is the point where you add the coriander and/or lemongrass, I didn't use these ingredients because I don't like them :)

    Blend into a paste.

    Drain and rinse the butterbeans.

    Roughly chop the Spring Onions

    Put the butterbeans into the blender, and pulse for a second or two to break them up (or use a potato masher to do this)

    Add the chopped Spring Onions and the paste to the beans

    blend to a good consistency and turn out on to a flat surface

    shape the mix into four patties

    coat the patties in seasoned flour

    heat some oil in a pan and fry the patties until golden on both sides

    Take the wedges out of the oven

    Put the wedges and beanburgers on a plate and enjoy!

    I didnt have time but I would usually make a fresh salsa or a rocket salad to go with this, the red sauce on the plate is a sweet chilli sauce.

    In that case I'll include the coriander and lemongrass and coriander, but leave out the rosemary. :D

    those burgers look good, i make something similiar myself the odd time with prawns instead of butter beans. must try the butter bean version.
    and the sweet potatoe wedges are an old favourite, add a bit of cayenne or chili flakes for more bite.

    I made these with black beans (didn't have any butter beans) and they were really lovely! A nice combination of flavours I wouldn't normally use in veggie burgers, cheers for the recipe :)
    I did find them quite hard to flip in the frying pan without breaking them though. Not enough flour perhaps...

    Cooked this dish tonight. We were impressed, loved the texture - totally new to us, lovely, light and full of flavour. Another recipe I'll be cooking again and adjusting a few ingredients to suit personal taste. I reckon my 2yr old will love these too. Thanks irishbird, thumbs-up here :)

    They were really, really good. We loved them so much that I'm making them again this week. I have to work on the texture, though. I think I blended it a bit too long, and I also had difficulty turning them in the pan. But they just taste sooo great! :)

    I am trying to get my boyfriend to eat less meat, so I was delighted that this one went down well. Could you recommend a good vegan/vegetarian cookbook or other such source?

    to be honest i dont really have a good veg cookbook, if you google vegetarian recipes there are loads of really good sites.

    These went down very well in my house. I made quite a few smaller patties, and we ate them in pitta breads with some salad. Delicious!

    These were fairly simple to do, although they fell apart a bit on the pan. They were also quite sharp so I may have overdone the lime...Will definitely make them again, thanks for the recipe. :)

    they weren't quite as burned as they look in that picture! They were very tasty but the consistency wasn't great, I don't know what I did wrong. It was like wet and gloopy mash just with crispy edges

    i am trying to think about why they would be wet. did you drain liquid off the butterbeans?

    I'm a big meat eater and I've never had butterbeans before but i love thai flovouring. These were gorgeous I could very easily see these being added to my small list of usuals!!

    Thanks for the recipe i really enjoyed the burgers and its showed me the need for me to invest in a proper food processor!!!

    Made these this evening and really enjoyed them. Flavours really good together in burgers. First time I tried sweet potato wedges too and they are delicious, so much more flavour than potato chips. Will make again. Thanks.

    So, Fri night I left work thinking I'm gonna cook Irishbirds thai yokes..
    Memorised the recipe..
    Bought what I needed and got home to make them.
    The only thing I got right was the mother fucking beans:rolleyes:
    Eh, cumin seeds, mustards seeds....wtf?
    So wrote a list on sat and got what I needed...
    Result..
    They were fab... Everyone loved them..
    So we nibbled on this...

Sifted through it looking for the little fecker for a half an hour. Eventually gave up and had to bin the lot and get 3-1's from the Chinese instead :(

    I went to make these last night and discovered it was a can of mushy peas, not a second can of butterbeans lurking at the back of the cupboard! So...quick improvisation with some mushrooms and breadcrumbs added to the mix and a success :)

    My boyfriend was convinced he was eating fish until the big reveal at the end of dinner that it was a fully vegetarian meal :eek::p

    Very tasty, quick to make and with stock ingredients, pretty much. Would definitely do these again. Would be good to eat the next day for lunch too.

    Made these just now and they're very tasty :)

    Now we know why the sweet potato is called sweet. Pity you don't like coriander and lemongrass, irishbird, they were quite prominent in the burger and nicely so

    Handy recipe to know as I'd usually have all the ingredients in the house, so I could slap up a meal without notice / having to do shopping

    Fiiiiiiiiinally got round to making these tonight. Absolutely delish! Was even surprised that I liked the sweet potato as I'd had sweet potato mash before and didn't like it at all.

    If, sorry...when I make these again I'll either use a smaller mixer to make the paste or cut all the ingredients up finely before adding them to the large mixer. I'll also use less lemongrass. I think half would be plenty, and I'll definitely make sure I chop it up really fine as it was a tad stringy, but that's the nature of the ingredient. Could've probably used a little bit more coriander than I did but used it sparingly as I thought it might be too overpowering.

    Also thought that they were a bit tough to keep together in the pan, so next time I'll chill them in the fridge for a while. (give me a bit of time to clean up too!)

    But all that aside they were really yummy.

    We had these again this evening.

    This time I put the burgers in the freezer for a little while for them to firm up. They seemed to be easier to handle after doing so. I served them with some sriracha sauce instead of sweet chilli.

    Empty plates afterawards! :)

    Bumping this after an awfully long time, but I made these burgers last week when my boyfriend's vegetarian sister came for dinner. They were great, we'll have them again at some stage definitely, whether or not we have any vegetarian present! Loads of flavour in them, although I think I might up the amount of garlic and lime juice next time. Made the wedges too and served with side salad, no photos though unfortunately, we were too hungry!

    I made this myself on Saturday.

    Burgers were lovely and didn't need any egg to hold them together or anything like that. I made them the night before and left them in the fridge. I made three small ones instead of one big one.

    I did sweet potato fries because oven sweet potatoes never quite work for me. They always end up scorched and not crunchy.

    I also did a coleslaw-type thing with red and white cabbage, brightly-coloured veggies and sort of an Asian dressing with lime juice, Tabasco Sweet & Spicy and some oil. The red cabbage stained everything purple, though. :eek::)

    And Chang and Singha beer to go with it. They have them in LIDL at the moment for about €1.50 a bottle.
