It isn't possible with Bluetooth. The iPhone's Bluetooth support is crippled and does not support file transfer so you have to do it over WiFi (with third party apps like Air Sharing) or cable (iTunes or again, third party apps to get "proper" file browsing support).

AFAIK, the only Bluetooth profiles that the 3G/3Gs support are:

    Hands-Free Profile (HFP 1.5)
    Phone Book Access Profile (PBAP)
    Advanced Audio Distribution Profile (A2DP)
    Audio/Video Remote Control Profile (AVRCP)
    Personal Area Network Profile (PAN)

But if you're happy to use WiFi for file transfers, look into Dropbox, Air Sharing, etc.

Um, why? My iPhone has been unlocked since day one and using it with iTunes is no problem. It never updates your firmware automatically, it always asks you and in fact, the first time it asks you about a particular firmware (e.g. the current 3.1.3), you can select an option to not be asked again... What firmware are you currently on? Anything from 3.0 onwards supports apps from the App store...

I'm on 3.1.2, i just thought better stay away from I tunes incase they brick the phone :)

Nah, you'll be fine... just never accept the update :). What are you trying to sync over bluetooth anyway? Documents, etc? Dropbox gets my vote, it's a great way of keeping files in sync on multiple computers and the iPhone.

As for virus scanners, try ClamXav, it's a Mac OS X port of ClamAV:

Can't vouch for how good or not it may be though, I've never had issues with viruses on my Mac...
