custom and practice

    Hi,
    would like to know the definition of "custom and practice" and what it includes and what would make it void. Both my boss, colleagues and I did on call cover 24hr X 7, boss declined to do it a few years ago, no discussion, but we continued to do it but now want to withdraw from it. On call is not in our contract.
