i know itunes will restore alll my purchased apps etc.

but is there anyway to get a complete image of my iphone how it is now so that if anything happened i could restore it back easily

Aptbackup from Cydia, it won't back up the JB applications but backup the names of app and will install all again after restore.

Yup, aptbackup is the only app I know of to do this, it's not perfect but it's better than nothing...

PKGBACKUP ( package backup) found in Cydia or Rock is another option .
It has an advantage over aptbackup in that it also holds a record of your Springboard setup , it's about $4 .
