Opened the spare fridge last night and there was two cocks hanging since 31st January  I'd completely forgotten about them and we don't use that fridge - apart from hanging game in it. Normally during the season I'd be putting stuff in each week so anything due to be eaten would be taken out.
Obviously with the end of the season I had no reason to go near it, so these two cocks were hanging for 17 days. Now I don't normally leave anything longer than about 10 days so I took them out with some trepidation. They were just starting to go off - smell was just getting a bit on the strong side. However, I filleted the breasts and pulled off the legs and she who must be obeyed, cooked them tonight for the dinner. They were feckin' lovely :)

I was delighted that they didn't go to waste.

    Watch this space :)

I still have two of the breasts which are going to my mother tomorrow and she'll eat them on Saturday so they'll be one day short of three weeks old. Should be interesting as she's never eaten pheasant before.

I gave a bird to my granddad whos 92, still goes fox shooting on a sunday!!

Gave him the bird i think around the start of december, Was up in his shed over christmas and the bird was still hanging! asked him what he was doing with it, Told me he hangs it till the body falls from the head, about 4 weeks!

needless to say he cleaned it himself i wasnt goin near it.

I'd heard that before ok. Don't think I'd fancy it myself though.

It must be tender enough for consumption without further cooking....:pac:

3 to 5 days tops. I like my meat rather fresh, pigeon breast for example can go fro field to pan in less than 2 hours.
