I want to get a fork cut and star nut installed this evening is possible.

Does anyone know what shops are open late on Thursdays and willing to do workshop duties?

It's not hard to do it yourself ... I did it a few months ago when I installed a carbon fork on my fixie. Not a star nut thingy though, a carbon steered cap / Carbon fork expander ...

Cycleways are open late on Thursdays, but you have to call in advance iirc.

You might want them to put on the fork crown race while they are at it. You can do it with a bit of wood and a mallet yourself but there is a special tool that makes it a lot easier to do right. If you have a bit of plastic piping of the appropriate size this does either. I've only installed carbon fork expanders myself but they are pretty trivial to do yourself. Cutting I can understand giving it to someone to make sure it is straight.
