How long will oysters survive?

    Once brought. Doing oysters tempura with a wasabi mayonaisse for sunday but obviously can't buy them on the day. If i was to get them on saturday, will they be still alive come sunday evening?

    They should be fine if unopened. Supermarkets tend to bag everything in plastic - if they come like that, take the oysters out of the bag and arrange on a couple of squares of damp kitchen on a plate in the fridge. They will keep for three days.

    If you are getting them from a fishmonger, buy one and get him to open it - it should be sitting in a little clear liquid. If it's sitting in a bowl of milky juice, it's been out of the water too long - while it maybe still alive, it won't be at its best.
