HELP cooking phesant

    i shot a pheasant on sun and cooked it it today but it smelt so bad i got one the week before and left it longer it it smelt worse. I just left it in a bag for for 3 day and cooked it in the oven what am i doing wrong

    When i shoot a pheasant i hang it in my shed for a few days then cook it

    shoot it, bring it home gut it and cook it,no need for hanging in my opinion. if you want to hang it then do for no more than 3 days (hanging) not in a bag,thats where you went wrong.

    Dont leave it in a bag for a start, just tie up by the feet and leave in a cool place for about 3 to 4 days.

    Cook it slowly with a few rashers and an onion shove up its rear you should be ok.

    You did remember to completely clean it out.

    +1 with jap gt whenever i shoot pheasants i hang them by the head and rabbits from the feet:D

    i keep chickens ducks and so on for the table, it has been so cold last few weeks that 10 days would'nt do much harm

    You have a long week in cork FD:p
    I would always hang my birds for up to 4 days by the neck.
    I cook them real slow in a casserole dish with plenty of red wine and veg breast side down.

    hang them in a cool place over nite. then pluck/skin them .i skin them .put them into a basin of cold salt water over nite.

    if your not mad keen on game and it sounds your not cook them with a chicken.covered in rashers ,dont over cook them .

    also the longer you hang them the stronger the game flavor gets ,never leave them in a bag as they will go rancid.

    there lovely in a indian sauce like tikka masala ,i make with a mix of chicken and pheasant.

    you should always hang chicken by the feet 2, it lets the blood drain into the cavity in the neck where you snapped it, much easier bleed it after hanging it

    I would always hang them. Called to an old woman for a chat one evenin and she told me the sooner you cook them after they're shot the better. She reckoned that if there shot in the breast it will spoil the meat the longer you leave it hanging. She said if its shot in the head she would leave it hanging for a couple of days but thats it.
    I was always told to leave them hanging.
    I hang everything by the feet to let blood drain to head?
    Should pheasant and duck be hung by the head or is it just personnal choice??
