On Jobseeker's allowance. Primarily applying for teaching english jobs all over europe, entirely online at this point.

So far, very little luck. Now I'm thinking about hopping ryanair to some different cities and trying my luck on the ground. Say head to Madrid for a week and hand in applications to all the English schools there. Head back to Ireland for a week. Head to another city to see if no job yet, etc.

Does this sound like it would get me in trouble? My primary goal would be job hunting, but I'm not sure if the social welfare office would look kindly on it regardless.

Have you talked to FÁS about working/job seeking abroad. They may be able to tell you how it would effect your DA. If not you will have to consult SW.
