Royal Icing - Problems!

    Christmas Cake is a real tradition in our house, but for the past couple of years the Royal Icing has been problematic - it goes hard within a couple of days, and becomes really hard to cut the cake without breaking the icing to bits ............ any advice?

    This is normal.

    Royal icing going hard is normal. If you do not want it to be that way just add a drop of glycerine into your Royal Icing that you are going to use for icing the cakes. It will prevent it from breaking.

    Probably didn't add enough glycerine - need a bolt-cutters and safety glasses to cut the icing right now!!!!
