Weekend Away in Portugal/Spain

Morning, I'm planning on getting mammy bear a golf weekend away in either Portugal, Spain, The Canaries etc... I've never played in Europe so would be starting from scratch doing my research. We're going to head over Fri morning and back Sunday night. Get 2-3 rounds in. If you've got any suggestions, fire ahead. Thanks.
