Wages as a percentage of sales?

    Does and know what percentages of sales should wages be set at for a small hotel, that is, just for the bar and restaurant.

    Only have experience in large hotel but percentages should be similar, Total labour cost each year used to run at about 25%. This would include accom staff, f&b and admin staff. F&b staff was running at about 28% of F&B sales.
