Take their name out of the contacts list - you'll still get the number showing of course, but there's no way of changing that, AFAIK.

If your phone is jailbroken you can use bitesms. Great app that is built upon the existing Messaging framework. It has a privacy mode where you can select what details are shown or hidden on the home screen. It won't hide the name in the app itself, just on the home screen when you get a message.
