What is stopping a competitor of a website, setting up a google anyalitics account and tracking and recording the web stats of their competitors website?...they would have many confidential figures such as page views ect?

They cannot track your site as a specific piece of code needs to be added to your site - hence only the webmaster or site owner can do this.

As TheWaterBoy has advised, you need to add a piece of code just before the </body> tag for Google Analytics to start tracking your website. The code needs to be added to every page you would like to analyse so only those with access to your server would ever be able to do this.
