Chicken stock

    I made chicken stock last night from the carcass of a roast the other day.

    Forgot to put it in the fridge last night, but it smells fine today.

    Is it ok to use this stock to make soup today or am I breaking some chicken health & safety rule? My other half is telling me I should throw it out.

    The soup will be cooked, put in the fridge and re-heated to eat, if that makes any difference...

    I'd say it's grand - you're going to be boiling it a good bit to make the soup again.

    It will likely be fine, you can smell it when it has gone off.

    I always leave a pot of stock to cool on the hob top overnight.
    Would only be a problem if you kitchen was particularly warm overnight.

    Jasus boys or girls, a cookery class would help here and maybe throw in a bit on nutrition like how to make chicken stock.
