Hopefully it will be set to Ireland as default for computers in Ireland.

Technically the country should be automatically selected to the country you are in.

Unfortunately I can’t quickly pop back to Ireland to test it.

If you’re in Ireland can you go on the above link and let me know what country is displayed?

I'm also seeing "Ireland".

Isn't it possible to use proxies for this purpose? If you google, say, "Spain proxy" you should be able to view what a Spanish person would see if they were to visit your site.
