Eating Squirels(grey of coarse)

    Any of ye guys tried grey squirel,next one i shoot ,im going to eat him,saw Hugh on River cottage cooking one on a spit over a barbie,looked good.
    I'd imagine they'd have to tast good as their main diet is nuts.

    Check out Anthelme Brillat-Savarin, a minor French aristo, lawyer and economist, famous as a gastronomist, most remembered for his book on the art of dining, La Physiologie du goût published early 1800s.

    He fled to the United States during the Reign of Terror, worked for a while as a chef and created a dish “Squirrels in Madeira Sauce.”

    Down South there are several Cajun recipies.

    I wouldnt be too much guided by anything that F**ker would ate , I saw him atein slugs out of a garden one night, another night he was atein pigs mickeys. That C**t would ate anything he gets for nothin.

    The majority of the human race eats insects as a major part of their diet Epointer, just 'cos you don't do it doesn't mean they won't. Not sure I'd go for woodlice, but grubs, crickets, ants, all of them are edible and actually really good for you - all protein, no fat.

    As to squirrel - well, it's a rodent. You'd want it in a strong curry because of their diet and you'd want it braised (cooked long and slow in a liquid), because they use all their muscles all the time so they'd be very tough if cooked fast.

    Not something I'd care to try myself unless I was starving...

    1 squirrel, quartered
    1 cup diced onion
    2 large tomatoes (from your garden) or 1 can of tomatoes

    Sprinkle seasoned salt, pepper, and cayenne pepper (optional) liberally on the meat. Pour some cooking oil into a large pot (dutch oven). Sauté the meat with the onions until well browned. Drain the excess oil, add about 2 cups water, and bring to a boil. Cut up the tomatoes and add. If you use canned tomatoes add them now. Turn down the heat, and let slow cook for at least an hour. Important: older squirrels may require cooking longer than an hour. Check periodically for tenderness. If you don't you will have a hard time chewing the meat. After the meat is tender, add the veggies, carrots, potatoes, banana pepper, what ever you like. Cook until the veggies are done. An option you can use is, cook up your favorite pasta and serve over the pasta. (eliminate the potatoes). That's it, nice and simple ~ Good eating: John [/FONT]

    That's more stewing than braising really, but same effect if you cook for long enough. If you browned the meat, then put it in a tinfoil pouch with the tomatos and a little water (you're not talking about a lot of liquid, just about the same volume of liquid as you have of meat) and sealed the pouch tight and then put that in a low oven for a few hours, that'd be braising.

    It must be good though! I suppose you have to de-bone it right?

    Maybe I make some squirrel stew for my dogs first...I suppose they are easier to prepare than birds, no plucking.

    I think it's all only done for the TV and what they'r eating is not what they'r cooking.

    There was an episode of the River Cottage Autumn (with my personal favourite celeb chef, Hugh Fernley-Wittingstall - he hunts too!) where he made a squirrel stew.
