why are you only training boxing once per week? you need at least 3 good boxing sessions a week plus mabye at least 2 conditioning session per week if your goin to be fighting?

try and get the lessons asap, in the gym not sure how experienced you are but a maybe try lots of bodyweight stuff like press ups dips chins etc, as for the runnin id go with interval sprints, jog 100m, sprint 100m, repeat 10-12 times

best way to get fit for boxing is to box, lots of it. Are you a gym member? Is yes set the cadio machines to 1 min very low intensity then 2 mins high intensity. Cross trainer & rower is good for this try and aim for 10 rounds.
Work in circuit training, skipping etc.

What the story here 'boxing is with the job'? How experienced is your opponent? How serious is this and will your coach put you in the ring with only training one day a week?

Doing 3 x 2 minute rounds requires a far higher level of fitness than you are expecting unless your getting in against a clown. You will have to train more than this if you want to be able to last 3 rounds because the guy from the other club may be doing 5 or 6 days a week.

As for training I find circuit training very good for conditioning, not whatever they do at the local gym, I do it at the club all with weights. With the time you have left though I would concentrate on boxing related exercises (shadow boxing, skipping, pad work, bag work sparring)
In particular I would look to really start working hard on a heavy bag and wear 16oz gloves when your doing it, really put it in. The sparring is also important.

Don't do too much bag work on the week of your fight, your not going to get stronger or fitter at that stage, only wear yourself out

I run an MMA club in Rush, at the moment we do Monday and friday nights, if you want you can train just boxing like some other lads do, 3 of the coaches are boxing coaches anyway so you'd get good coaching plus i'll get you a few spars too, let me know if your interested..
